One other nice pork product is wild boar - hopefully a diet based more on nuts and roots than grain. Done a lot of nice things with boar shoulder, and wild boar bacon is definitely a gateway meat for vegetarians of my acquaintance.

The only boar I have had was at a Tuscan vineyard, in a ragu. Tasty but I can't say I have really tasted it. I will taste anything, and usually I like (bananas, for some reason, being the rare exception. Really don't care for them.) my cooking went to another level when I went cast iron. I was waiting for the promised inheritance from my mother, whose set comes down from her grandmother, but when Mom hit 90 without missing a beat I decided I couldn't wait. I use it now for most everything, including eggs. Mine weigh three times hers, but I use it on the stove, in the oven, on the grill. My best roast chicken is in the ci skillet in a hot oven. I have asked for her ci corn stick pan (circa 1885) until I have given up. When we were married we asked for and received fancy Dan triple core fancy name brand all the range cookware, when what we needed was a set of cast iron from Ace hardware for less then the cost of one of those fancy pots. Ah, youth.
