Ukraine at this point has to hope for a complete morale failure in the Russian military leading to a serial mass surrender. Surrounding a significant formation and causing it to capitulate could do that. Otherwise, Ukraine will just be slowly pounded into oblivion. If Russia can hold up politically for however long that takes, no other outcome is really possible. Ukraine simply doesn't have the combat power to force a Russian surrender or to drive them put of the country. They can hold Russia off for a while, maybe a long time, but not forever.
