UT is brobdingnagian, which is good for a party school atmosphere. But the education is still good, and if you're motivated, you can still get facetime with professors (office hours--uncommonly utilized regularly at any university). There are a number of Stanford-educated professors at UT who seem to get the teaching/research balance correctly. I hardly see those profs at local alumni events though. The ivory tower makes heavy time demands.
I think the only major that de facto requires 5 yrs to graduate is architecture. Everything else seems to be doable in 4 yrs unless you're trying some Plan II honors + other non-liberal arts amalgam of majors.
In any case, Texas has had a spotty recruiting record lately, and Stanford has had a generally good record. I wouldn't consider the kind of kid that Texas recruits to be the same kind of kid that Texas recruits. Any student that Stanford recruits will know about the comparative academic and life advantages of a Stanford degree.
