As for challenge trials, this organization (or website, at least) has registered over 4,000 volunteers to take part in challenge trials: https://1daysooner.org/ I didn't see any information about the age distribution of the volunteers.
I'd recommend checking out their history section. Challenge trials have been used on a number of diseases, some of which can be fatal.
