I nominate Rice as Stanford of the South.  There's a large sign on the Rice campus commemorating their baseball national championship win over Stanford in 2003.

Funny, but I don't think of Texas as the South, but rather the Southwest. Maybe because of the former conference and current airline?

But if we go by the U.S. Census Bureau, then Texas is in the South. William Marsh Rice University fits the bill as a private school, too, so that helps. I suppose that Vanderbilt would be a candidate for Stanford of the South as well.
