One question--is it still just the 10 highest-scoring teams from each of the men's side and women's sports that gets counted?

Yes -
Stanford has always been helped by fielding 20+ top 10 teams each year.  Occasionally other programs have produced better results for their 5 to 10 best tallies, but then fall short of Stanford's total because they simply do not have 20 results.  Going forward beach volleyball should help USC in the Cup tallies even if Stanford becomes a top 10 program in the sport.
