Peat and Carter left Stanford after three years, and I think have not received a degree yet.
They were also the first Stanford players to leave for the NFL after three years in a long time (since Teyo Johnson?).
Luck and Reynolds (and several others) left after their senior years, and I think both received a degree. I do not consider that leaving early, despite having another year of eligibility in their pocket.
Hooper would presumably fall into the same category as Peat and Carter, though I don't know anything about his academic status.
[Most draftable baseball players leave after three years, but many manage to graduate nonetheless. It does take planning and work.]
