Stanford cooks - Rally - 10-26-2014

It has been fun talking cooking.  Let's discuss it here.  Tailgate recipes?  At home game day dishes?  Culinary victories, defeats?  Exotic ingredients?  Techniques?  Intellectually brutal culinary experiences?  Did you cooking woo your spouse/boyfriend/girlfriend?  Do you use your mother's recipes?  Do you even use a recipe?  Pictures of triumps are always nice.  Even coffe fanatics are welcome.

Turnips isn't any closer than triumphs :). I was thinking of something simple, like this.

In honor of this week's opponent, would roast Duck count as culinary triumph?

Of course!

Re: Stanford cooks - FarmDad.01 - 10-27-2014

Last couple of years, it's been pressed duck. I'll never forget that 2013 image of Oregon players sitting on the bench crying.

Re: Stanford cooks - fullmetal - 10-27-2014

I gotta eat some Beijing duck this week.

Re: Stanford cooks - BostonCard - 10-27-2014

I believe the dish is still called Peking Duck, even as the PRC has moved from the Wade Giles romantization of the city (Peking) to the preferred Pinyin (Beijing).  Even the Chinese refer to it as Peking Duck:

And refer to the university as Peking University.

A couple useful references:

I was only typing it as I was pronouncing it in my head :p

Re: Stanford cooks - Hurlburt88 - 10-28-2014

I thought name was Beijing Kaoya in Mandarin--I have never heard it referred to as Peking inside China.

Re: Stanford cooks - yvonne - 10-28-2014

Yes, I've roasted it. I've also smoked it in the barbecue smoker.

Yes...but they end up quacking too much.

Definitely, made braised and pulled duck with the slow cooker or pressure cooker multiple times, and have roasted Duck at the last two home games against the Quacks (or someone in my tailgate has).  My favorite fowl.

Re: Stanford cooks - Viking_Guy - 10-28-2014

Have done most of the above, as well as turducken and my favorite, Duck Confit.  Then used the rendered duck fat to make various kinds of dishes, including duck fat roast potatoes that were pretty darned good.

Don't think anything can beat the Epic Meal Time Thanksgiving feast (Pig, Turkey, Duck, Chicken, Cornish Hen, Quail).

Peking Duck in Shanghai!  At least on the English menu.
