Thomas, Howell, Richards, Reynolds.... remember when Stanford had safeties.

Yeah, it wasn't even that long ago. Justin Reid in 2017. A bright spot among the many converted corners.

At least multiple frosh ACTUAL safeties are already seeing PT.

Howell started his career at running back.  Webex had reasonable success converting guys from offense to safety.  In addition to Howell, Lynch was a converted QB, and more recently Dallas Lloyd did reasonably well as a converted QB.

On that play, does anybody know what would happen if Thomas is the one to recover the ball but is out of bounds? Would that be a safety?  I'm honestly super curious.

Yes. Recovering or even touching the ball while out of bounds is treated as the ball going out of bounds.

Tim Smith also converted from quarterback to safety.

Oh, hi YCF.  I remember you from TOS.

Ty Montgomery once took advantage of the rule by "creating" a kickoff out of bounds by intentionally touching the ball while lying down and having his feet our of bounds.  Penalty on the kicking team so green bay started at the 40.

Would it be a safety or a touchback?

Safety. The ball is being possessed by a player out-of-bounds, and is thus out-of-bounds itself (similar to the Ty Montgomery situation above). So it would be treated as if the ball was blocked out of the back of the end zone (since that's where Thomas would've been out of bounds), for a safety.
